In 2015, a close friend’s English Mastiff, Samson, passed away. With the help of our friend, we made a big beer that fittingly pays tribute to a big dog with a big heart.
Our take on a traditional English-style Barleywine was aged in a mix of Port and Pinot Noir barrels for six months. These barrels imparted a heady fruitiness complementary to the malt profile. Unlike American versions of the style, our recipe is more subdued on the hop front. Instead, delicate aromas of orange blossom and honey contrast with a rich body and powerful finish. This gentle giant of a beer would pair superbly with a Stilton cheese… possibly on a hamburger! It will overwhelm most dishes with its intensity, so treat it like a dessert wine. Crack one open and enjoy alongside your favorite furry friend.

Cellaring Recommendation: 5 years or more! Barleywines are one of the best cellaring beers, due to their high ABV and rich flavors. If you can’t wait that long, it’s okay. Ol’ Samson is ready to enjoy now, too.
